Coperta’s Sweet Moon Pancake + Maple Syrup Brunch
we are thrilled to announce the second rising of Coperta’s Sweet Moon Pancake + Maple Syrup Brunch pop-up on Saturday, March 21, 2020, from 10:00 a.m. – 1:00 p.m.
Once again, chef Russ will take over Coperta’s kitchen, offering a special brunch menu inspired by his maple syrup obsession. Russ and team will create a menu of sweet & savory pancakes, side dishes and cocktails, as an “ode to maple.” Russ will be traveling to Canada in March before the Spring Sweet Moon pop-up to source additional syrups to augment selections from Vermont and Washington, so the pairings below are subject to change and availability.
The Sweet Moon, also known as the ‘Sugar Moon’ or ‘Worm Moon,’ marks the last full moon before spring and the time when sap begins to leak from the wrinkles of maple tree bark, historically known to symbolize the seasonal transition. This year’s Sweet Moon occurs on March 9 and will be one of three supermoons in 2020.

Sucrerie de la Montagne (Rigaud, Quebec, Canada)
Cubano pancake with mojo roasted pork, river bear ham, Swiss cheese & mustard greens
Cabane a Sucre au Pied de Cochon (Mirabel, Quebec, Canada)
Maple cinnamon bun
Panzanella with arugula, jicama, fennel seed & taffy vinaigrette
Poutine (French fries, cheese curds & gravy)
Black chanterelle mushrooms with garlic, black truffle & rosemary
